i think i am gonna have to try this..my daughter gave me a caramel corn maker for christmas..for the caramel you make it calls for 2 tbsp karo syrup,baking soda,brown sugar and butter...of course i have no karo syrup...and i really want to try this..and the syrup cn be used for pancakes and such anyway...let you know how it turns out....

Ingredients

  •  1-1/4 cups all-purpose flour
  •  1/4 teaspoon salt
  •  6 tablespoons cold lard
  •  FILLING:
  •  4 ounces German sweet chocolate, chopped
  •  2 ounces unsweetened chocolate, chopped
  •  1 can (14 ounces) sweetened condensed milk
  •  4 egg yolks
  •  1 teaspoon vanilla extract
  •  1 cup chopped pecans
  •  TOPPING:
  •  1/2 cup packed brown sugar
  •  1/2 cup heavy whipping cream
  •  1/4 cup butter, cubed
  •  2 egg yolks
  •  1 cup flaked coconut
  •  1 teaspoon vanilla extract
  •  1/4 cup chopped pecans

Directions

  1. In a small bowl, mix flour and salt; cut in lard until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic wrap. Refrigerate 30 minutes or overnight.
  2. Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Line unpricked pastry with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice.
  3. Bake 11-13 minutes or until bottom is lightly browned. Remove foil and weights; bake 6-8 minutes longer or until light brown. Cool on a wire rack. Reduce oven setting to 350°.
  4. In a microwave, melt chocolates in a large bowl; stir until smooth. Cool slightly. Whisk in milk, egg yolks and vanilla; stir in pecans. Pour into crust. Bake 16-19 minutes or until set. Cool 1 hour on a wire rack.
  5. Meanwhile, in a small heavy saucepan, combine brown sugar, cream and butter. Bring to a boil over medium heat, stirring to dissolve sugar. Remove from heat.
  6. In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Cook 2-3 minutes or until mixture thickens and a thermometer reads 160°, stirring constantly. Remove from heat. Stir in coconut and vanilla; cool 10 minutes.
  7. Pour over filling; sprinkle with pecans. Refrigerate 4 hours or until cold. Yield: 8 servings.
  8. Nutritional Facts

    1 piece equals 801 calories, 54 g fat (24 g saturated fat), 215 mg cholesterol, 227 mg sodium, 75 g carbohydrate, 5 g fiber, 12 g protein.

Rudy’s Creamed Corn

Ingredients
4 lbs. frozen sweet corn
2 8 oz blocks cream cheese, diced into 1 inch squares
1 stick (4 oz) of salted butter
3/4 cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
1/2 teaspoon salt
Directions
Throw all the ingredients, without any sort of ceremony or circumstance, into a crockpot on medium or low for at least 4 hours. If you need it done faster, cook it on the stove or on high in the crockpot, but be prepared to sacrifice a little of the savory goodness that results when corn is allowed to soak in dairy for hours. All of the cream cheese pieces should be completely melted and will easily break down and combine with the cream and butter to make the ‘gravy’.
Do not over-salt. There is plenty of salt in the butter and cream cheese. Over-salting will ruin this dish.

Directions

  • 1Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • 2In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
  • 3In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
  • 4Bake about 25 minutes or until knife inserted in center comes out clean.

    Ingredients
    • 2 1/4 cups all-purpose flour
    • 1 1/2 cups granulated sugar
    • 3 1/2 tsp baking powder
    • 1 tsp salt
    • 1 1/4 cups milk
    • 1/8 cup vegetable oil
    • 1 stick butter, softened
    • 1 tbsp vanilla extract
    • 3 large eggs
    Instructions
    1. Measure flour into quart size mason jar.
    2. Add sugar on top, then baking powder, then salt. Place lid on jar. (My ingredients JUST fit)
    3. When ready to prepare cake batter:
    4. Place softened butter into stand mixer and mix on medium for 1-2 minutes.
    5. Place dry ingredients into stand mixer and combine with butter for 30 seconds.
    6. Add milk, oil, vanilla and eggs and mix on medium-high for one minute.
    7. Pour batter into prepare pans. Bake at 350. For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes. Cool before frosting.

    • 2 cups sour cream
    • 1 pkg. instant chocolate pudding small box
    • 1 small bag (6 ounces) semisweet chocolate chips
    • ¾ cup oil
    • 4 eggs
    • 1 cup water
    Instructions
    1. Spray crock-pot with non-stick spray.
    2. Mix all ingredients together.
    3. Cook on low for 6 to 8 hours or high for 3-4 hours.
    4. Don’t lift the lid. Serve with ice cream. Store in fridge. Reheat or eat cold and enjoy!
